Healthy burger bowl & vegan thousand island dressing recipe
This is truly one of the most simple and delicious healthy dinner recipes ever! It is well balanced with healthy fats, protein, carbs & greens. I kept it very simple but some yummy additions would be pickled red onions, grape tomatoes and/or bacon!
Recipe for burger bowl (serves 8)
6 hearts of romaine lettuce (can be substituted for other greens!)
2 pounds of organic ground beef
2 ripe avocados
4 tbsp nutritional yeast
4 medium gold potatoes
2 tbsp coconut oil
Spices to season fries: salt, garlic powder, onion powder & smoked paprika to taste
Optional additional toppings (tomatoes, pickled red onions, bacon etc.)
Recipe for vegan thousand island dressing:
3/4 cup raw cashews (soaked in hot water for 2 hours or lukewarm water overnight)
1/2 cup water
1 tbsp lemon juice
1/4 cup ketchup (I use this one because it has super clean ingredients!)
3 tbsp dill pickle juice
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp onion powder
Directions:
Preheat oven to 425°F and cut golden potatoes into fries & place on lined baking sheet (I use these reusable baking mats). Massage fries with coconut oil and spices. Bake fries in preheated oven for 25 minutes or until light brown and crispy.
While fries are baking, make the dressing. Blend together the soaked cashews, water, lemon juice, ketchup, pickle juice & spices in a high speed blender until smooth.
Next, cook the ground beef. Heat a large frying pan with a little bit of oil on medium heat. Once hot, add beef and a little bit of salt to the pan. As it cooks, stir and break up lumps until browned.
Cut up lettuce & avocado along with any other toppings you chose.
Assemble bowl by dividing the lettuce between eight bowls. Add fries, beef, avocado and any other toppings you prepared. Drizzle the thousand island dressing on each bowl. Finish by sprinkling nutritional yeast on top!
