The best curry chicken salad recipe

This chicken salad is a household favorite for my husband and I. It is super easy and just so.dang.delicious. I love to put it on thin rice cakes with avocado slices on top, however it’s also super good on sourdough, with plantain chips or crackers, or even just on a bed of greens! YUM!

Recipe (serves 6)

  • 3 cups of canned or shredded chicken 

  • 1/2 cup of vegan or regular Mayo (I linked my favorites clean ones) 

  • 1 tbsp curry powder 

  • 1 tsp turmeric 

  • 1 tsp garlic powder

  • 1/2 tsp salt 

  • 4-6 stocks of celery 

  • 1/2 cup roasted pecan or cashew pieces 

Directions:

  1. Add chicken and mayo to a large bowl and stir until well combined.

  2. Add spices and stir

  3. To finish, add chopped celery & pecans to the mixture and stir one last time.

  4. Store in airtight container in the refrigerator for up to a week!
