Gluten Free Banana Collagen Muffins
Makes 12-15, depending on how big your bananas are! I LOVE these reusable silicone baking cups!
Ingredients:
3 ripe bananas
1/2 cup cassava flour
3/4 cup coconut sugar
4 scoops collagen — I love & use both Perfect Supplements (Code: AUDREY10) or Equip (Code: HEALTHYHONEY)
2 eggs
1/4 cup coconut oil or butter melted
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup dark chocolate chips
Directions:
Preheat oven to 350 Fahrenheit.
Mash bananas in bowl & then add the rest of ingredients minus the chocolate chips
Mix everything together with an electric mixer until smooth! I like for there to still be some chunks of banana.
Fold in chocolate chips.
Scoop evenly into muffin tins and bake for 20–22 minutes, or until golden brown & middle is not jiggly1
