Gluten Free Banana Collagen Muffins

Makes 12-15, depending on how big your bananas are! I LOVE these reusable silicone baking cups!

Ingredients: 

  • 3 ripe bananas 

  • 1 heaping cup oat flour or 1 1/2 cup of oats blended 

  • 1/2 cup cassava flour 

  • 3/4 cup coconut sugar 

  • 4 scoops collagen — I love & use both Perfect Supplements (Code: AUDREY10) or Equip (Code: HEALTHYHONEY)

  • 2 eggs 

  • 1/4 cup coconut oil or butter melted 

  • 1 tsp vanilla 

  • 1/2 tsp cinnamon 

  • 1/2 tsp baking soda 

  • 1/2 tsp sea salt 

  • 1/2 cup dark chocolate chips 

Directions: 

  1. Preheat oven to 350 Fahrenheit.

  2. Mash bananas in bowl & then add the rest of ingredients minus the chocolate chips 

  3. Mix everything together with an electric mixer until smooth! I like for there to still be some chunks of banana. 

  4. Fold in chocolate chips. 

  5. Scoop evenly into muffin tins and bake for 20–22 minutes, or until golden brown & middle is not jiggly1
