Easy High Protein Pancake (all made in one dish!)

The best thing about this recipe is that it is all made in ONE dish. It is also super tasty and has over 36 grams of protein! The recipe is originally from Brynley Joyner, but I made a few tweaks.

Ingredients:

  • 1/2 of a mashed banana 

  • 1/3 cup paleo pancake mix

  • 1/2 cup egg whites (I got organic liquid egg whites from sprouts!)

  • 1 scoop collagen — I love Perfect Supplements (code: AUDREY10) and Equip (Code: HEALTHYHONEY). I also tried it with Equip’s peanut butter protein powder instead of collagen, and it’s yummy! I prefer collagen, but the protein powder obviously adds more protein!

  • 1/4 tsp vanilla extract

  • Toppings: 2-3 tbsp organic skyr or greek yogurt, frozen or fresh berries, 1 tbsp peanut butter or almond butter, sprinkle of bee pollen, drizzle of maple syrup

Directions:

  1. Mash banana in glass dish. Mix in pancake mix, collagen (or protein powder), egg whites & vanilla. Microwave for 2 minutes. If you prefer not to microwave, one of you all said you air fried it on the bake setting for 10 minutes & it was great!

  2. After it is cooked, spread skyr or yogurt in an even layer across the top, and then add the rest of your toppings!
